Easy Homemade Chicken Noodle Soup
I’m so excited to share with you this Easy Homemade Chicken Noodle Soup. This is a favorite in our house during Fall and Winter, especially when it’s cold and flu season. There is just something special about chicken noodle soup that always makes you feel better. Whether you are feeling homesick or under the weather, it’s the perfect medicine. This recipe is filled with pieces of juicy chicken, fresh vegetables, chicken broth and best of all, homemade noodles.
Homemade Noodles vs. Store Bought Noodles
This recipe includes instructions on how to make homemade noodles for your chicken soup. They are pretty easy to make and don’t take a ton of time. If you are up for it, I definitely recommend it. However, if you aren’t feeling well, homemade noodles might not be in the cards. You can definitely use store bought noodles for this recipe, about 1/2 pound should do the trick. Also, they don’t have to be actual “noodles” either, they can be any kind of pasta really. Here are some store bought options that would work well:

How to Make Homemade Noodles for Chicken Soup
So you’re committed to making the Homemade Noodles, eh? Awesome, let’s do it! Here is all you need to do it:
- Flour
- Egg
- Milk
- Salt
Is that really all you need? Yep, simple ingredients and simple steps to put them together. Once you’ve gathered your ingredients, you will mix them together with a fork until a dough ball starts to form. Then, you will knead the dough for a bit till it’s smooth. Next, let it sit for a bit and let the dough relax. You can chop your vegetables while you’re waiting. Lastly, roll out your dough and cut them into strips. You can roll and cut your noodles as thin or as thick as you like. I like to roll the dough about 1/4″ thick and cut the strips about 1/2″ thick. I like the noodles best if they have a bit of time to dry out, so let them hang out while you put the rest of the soup together. Full recipe and details below!
Easy Homemade Chicken Noodle Soup
Ingredients
Homemade Noodles
- 1 cup all purpose flour
- 1 large egg
- ¼ cup whole milk
- pinch kosher salt
Chicken Noodle Soup
- 1 cup chopped celery
- 1 cup chopped carrots
- 1 cup chopped onions
- 1 clove garlic, minced
- 2 Tablespoon olive oil
- 1 teaspoon dried thyme leaves
- 1 teaspoon dried sage
- 1 teaspoon dried parsley
- 3 cups chopped cooked chicken
- 8 cups chicken stock
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
Instructions
Homemade Noodles
- In a medium bowl, combine flour, egg, milk and salt. Stir together with a fork until a dough ball starts to form.
- Turn dough out onto a floured surface and knead for about 1 minute until dough is smooth. Let dough rest for 5 minutes while you chop your vegetables and chicken for the soup.
- After the dough is rested, roll it out to approximately ¼" thick. Cut dough into ½" strips and leave out to dry while you start the soup.
Chicken Noodle Soup
- Heat a large pot or Dutch oven over medium heat and add in olive oil. Once olive oil starts to shimmer, add in celery, carrots, onions and garlic.
- Sauté vegetables for 3-5 minutes until they start to soften. Add in dried thyme, sage and parsley and stir to combine.
- Add in chicken stock and bring mixture to a boil over medium high heat. Reduce heat to medium low and add in noodles. Let the mixture slowly boil for about 15 minutes until the vegetables are soft and noodles are cooked through.
- Stir in chicken pieces and season with salt and pepper.
