Preheat oven to 375° and line baking sheet with parchment paper.
In a small bowl, combine both mustards with the maple syrup, parsley, garlic powder, salt, and pepper. Mix together thoroughly and brush onto the salmon filet.
In another small bowl, combine the panko breadcrumbs with the parsley, garlic powder, onion powder, paprika, salt, and pepper. Stir to combine and pour over the salmon filet, pressing the breadcrumb mixture down slightly to get it to stick well to the salmon.
Drizzle the top of the breadcrumb mixture with olive oil. Cook the salmon in the preheated oven for 25-30 minutes until golden brown and cooked through. Fish is done when it flakes when you cut it with a fork.
