Ingredients

  • 8 ounce wheel of brie cheese
  • cup cherry preserves
  • ¼ cup shelled pistachios roughly chopped

Instructions

  • Preheat the oven to 325˚ and place the wheel of brie in a small baking dish or cast iron skillet.
  • Use a sharp knife to score the rind by cutting slits both horizontally and vertically on the top of the brie.
  • Spread the jam over the brie and then sprinkle the top with the chopped pistachios.
  • Bake in the preheated oven for 10-15 minutes until the brie is softened. Serve warm brie with crackers or sliced french bread.

Notes

  • Scoring the top of the brie helps the cheese melts slowly.
  • Bake in a dish just big enough for the cheese so it doubles as a serving dish.
  • Gently press the side of the brie with the back of a spoon to see if it has softened.
  • If you want to transfer the brie to another serving plate , let it cool for 10 minutes.

Substitutions and Variations

  • Jam - Strawberry, raspberry, fig, peach or apricot jam will also work. A spicy jam or pepper jelly would be great too.
  • Nuts - Chopped walnuts, pecans or sliced almonds could be used as well or even a salty or spicy nut mix.
  • Puff Pastry - Thaw a frozen puff pastry sheet and place the wheel of brie in the middle. Follow the directions for scoring the cheese and adding the toppings and then fold the pastry dough up and on top of the jam and nuts. Scramble an egg with some water and brush the puff pastry before baking and to help it seal together if needed. Bake until golden brown
  • Nut Free - Omit the nuts and bake the cheese with jam only.
  • Wedge - A wheel is definitely easier to bake, a wedge can be used as well. It will only take about 5-10 minutes at most and won't hold it's shape like the wheel, so it's best to serve it in the container you baked it in.

Make Ahead and Storage Instructions

Assemble the brie up to 2 days ahead of time before baking. Store in the baking dish wrapped in plastic wrap in the refrigerator until you are ready to bake it. Take the dish out 15 minutes before baking while the oven preheats or add 5 minutes to the cooking time.
Leftovers will keep for up to 1 week in the refrigerator in an airtight container and can be reheated in the oven.
