This grapefruit cocktail is light, refreshing, and the best brunch cocktail that is also one of the best cocktails for mother's day! Fresh grapefruit juice is topped with elderflower liqueur and prosecco for a fruity, floral cocktail with just the right amount of fizz!

Ingredients

  • 4 ounces fresh grapefruit juice approximately 1-2 medium grapefruits
  • 1 ounce elderflower liqueur
  • 8 ounces prosecco see note below

Instructions

  • Juice grapefruit(s) to get fresh juice and strain to remove any large amounts of pulp. Pour 2 ounces of juice into each serving glass.
  • Add ½ ounce of elderflower liqueur to each glass and then top each glass with 4 ounces of prosecco.

Notes

  • Dry champagne or another sparkling wine can be used as an alternative to prosecco.
  • For a non-alcoholic version, omit the elderflower liqueur and replace the prosecco with club soda.
  • For a crowd - combine 3 cups (24 ounces) of grapefruit juice with ¾ cup (6 ounces) of elderflower liqueur in a punch bowl or beverage pitcher. Top with 2 - 750 ml bottles of prosecco. Freeze slices of fresh grapefruit to use for garnish and to keep punch cold. Serves 12.
