Herb Roasted Sliced Potatoes
Thick sliced russet and sweet potatoes are seasoned with fresh herbs and roasted in the oven to perfection for an easy and healthy side dish!
- 2 large sweet potatoes approximately 1 ½ pounds total
- 2 large russet potatoes approximately 1 ½ pound total
- ¼ cup olive oil
- 2 Tablespoons fresh thyme leaves chopped
- 2 Tablespoons fresh sage leaves chopped
- 1 teaspoon kosher salt
Preheat the oven to 400˚ and line two sheet pans with parchment paper.
Wash potatoes and cut off the ends. Slice potatoes in 1" thick slices.
In a large bowl, add potato slices, olive oil, fresh herbs, and salt. Toss to combine until all of the slices are evenly coated with olive oil and seasonings.
Place seasoned potato slices evenly spaced on the prepared sheet pans in a single layer.
Roast potato slices in the preheated oven for 30 minutes, rotating the sheet pans between oven racks halfway through for even cooking. Potatoes should be lightly crispy and fork tender.
