These delicious buffalo chicken burgers on the grill are a must make for Summer. Stuffed with a blue cheese and hot sauce infused butter and topped with pepper jack cheese, these zesty burgers are packed full of flavor!
Combine hot sauce, softened butter, and blue cheese in a small bowl. Mix everything together until everything is thoroughly combined.
Place butter mixture on a small piece of plastic wrap or wax paper and roll up tightly into a cylinder that is approximately 4 inches long and 2 inches in diameter. Place butter in the freezer for at least 20 minutes to solidify it.
Chicken Burgers
Mix together ground chicken, hot sauce, celery salt, garlic powder, and black pepper in a mixing bowl.
Slice compound butter into four equal pieces that approximately one inch thick. Divide the meat mixture into four equal pieces and place one slice of the butter inside a piece of the ground meat mixture. Wrap the meat around the butter slice pressing lightly so the butter is encased completely in the middle of the meat. Slightly flatten the meat into a burger patty.
Place uncooked burgers on a plate or platter in the freezer for 15 minutes to chill while the grill is prepared.
While burgers are chilling, preheat the grill to high heat or approximately 400˚. When the grill has been preheated, generously grease grill grates by rubbing them with a paper towel with vegetable oil on it. This will help prevent the burgers from sticking.
Remove the burgers from the freezer and place them on the preheated and oiled grill. Cook 7-8 minutes until they are browned. Flip and cook an additional 8-10 minutes or until the internal temperature of the burger reaches 165˚ when checked with a kitchen thermometer.
Baste burgers with extra hot sauce and top each with a slice of pepper jack cheese.
Remove burgers from the grill and allow them to rest. While the burgers are resting, place the burger buns on the grill and allow to toast for 1-2 minutes until lightly browned.
Top finished burgers with a leaf of romaine lettuce and serve on grilled burger buns.
Notes
Use ground chicken as opposed to ground chicken breast for better flavor and texture to the burgers.
Use softened butter when making the compound butter so that it easily mixes with the other ingredients.
Freeze the butter after making it so you can easily slice it for stuffing into the buffalo chicken burgers.
Don't skip on chilling the burgers in the freezer while the grill is preheating. This helps them to stay together while grilling.
Make sure to generously grease the grill by rubbing the grates with a paper towel
Substitutions and Variations
Less spicy - For a less spicy version, do not baste the buffalo chicken burgers with extra hot sauce and replace the pepper jack cheese with provolone cheese.
Gluten free - Wrap the finished burgers in romaine lettuce or replace the buns with your favorite gluten free buns.
Dairy Free - Omit the butter stuffing and cheese on top of the burgers.
