Fresh Grilled Peaches with Mascarpone

Fresh Grilled Peaches with Mascarpone Cheese are the BEST Summer dessert made in only 15 minutes.. Juicy peaches a grilled until slightly caramelized and topped with honey whipped mascarpone pistachios.

Ingredients
  

  • 8 ounces mascarpone cheese room temperature
  • 2 Tablespoons honey
  • 1 teaspoon vanilla extract
  • kosher salt
  • 6 large ripe peaches
  • olive oil
  • ¼ cup chopped shelled pistachios

Instructions
 

  • Preheat the grill to medium high heat, approximately 375˚.
  • In a small bowl combine mascarpone cheese, honey, vanilla extract and a pinch of kosher salt. Whisk the ingredients together till creamy and well combined. Place in the refrigerator.
  • Cut peaches in half and remove the pits. Lightly brush with olive oil and sprinkle with a little bit of kosher salt.
  • Place the peaches flesh side down on the preheated grill, and cook for 8-10 minutes until small bubbles can be seen around the edges. The surface should be lightly browned and caramelized. 
  • Remove peaches from the grill and place on a serving platter or on individual serving plates. Top peaches with the sweetened mascarpone and sprinkle with chopped pistachios.

Notes

  • Choose peaches that are just barely ripe. If the peaches are overly ripe, they will be mushy after grilling and will fall apart. 
  • Easily halve the peaches by carefully running a sharp knife around them going all the way to the pit, then twist them apart. Remove the pit by pulling it out with your fingers or a spoon. If it's hard to remove, try running a sharp knife around the outside of the pit to help loosen it.
  • These grilled peaches with mascarpone are best served hot off the grill, but can also be served room temperature or chilled.
  • Leftover peaches will keep in the refrigerator for 1-2 days stored in an airtight container. They can be reheated in an oven or microwave if desired.

Substitutions and Variations

  • Plums, apricots and nectarines can be used as alternatives or in combination with the peaches
  • Substitute the mascarpone cheese with ricotta cheese, ice cream or greek yogurt
  • Substitute the pistachios with sliced almonds, chopped pecans or granola

Alternative Cooking Methods

  • Indoors - These grilled peaches with mascarpone can be made using either a cast iron skillet or a grill pan. Heat the skillet or pan over medium high heat and follow the same instructions that are listed for grilling. Keep an eye out for bubbles starting to form around the edges. This will indicate the fruit is caramelizing and almost done.
