This hot and sour vegetable ramen is sure to cure whatever ails you! Perfect if you have a cold or just want something warm and comforting.
In a large sized pot or dutch oven over medium high heat, add sesame oil along with mushrooms and onions. Saute vegetables until they are softened, about 3 minutes.
To the vegetables, add in chopped garlic and ginger and saute for an additional 30-45 seconds until fragrant.
Then add vegetable broth, oyster sauce, soy sauce, lime juice and rice wine vinegar and stir to combine.
Bring the mixture back up to a boil and cook for 1 minute before adding in ramen noodles. Once you add in the noodles, cook until the noodles are soft. This should take about 2-3 minutes.
Remove off of the heat and stir in baby spinach, salt, and pepper. Sriracha can be stirred in at this point or served on the side as a garnish.
