PEPPERMINT COOKIES DIPPED IN WHITE CHOCOLATE

Ingredients

peppermint extract

3/4 lb

UNSALTED BUTTER

WHITE CHOCOLATE

1/3 c

CRUSHED PEPPERMINT CANDY

Step 1

Mix together butter, sugar and peppermint extract until just combined

Step 2

Sift in flour and salt and mix until the dough just comes together

Step 3

Turn dough out and shape into a disc. Wrap in plastic wrap and chill in the fridge for 30 minutes

Step 4

Roll dough out to 1/4 - 1/2 inch thickness and cut into circles

Step 5

Bake at 350˚ for 15-20 minutes until the edges just start to turn brown

Step 6

Melt white chocolate in the microwave at 50% power in 30 second intervals

Step 7

Dip the front half of the cookies in the white chocolate

Step 8

Sprinkle with crushed peppermint cookies and let the chocolate dry
