Step 1

Slice the top off of the head of garlic to expose the cloves

Step 2

Drizzle with olive oil, wrap in foil and place in an oven safe dish.

Roast in the oven at 400˚ for 45-60 minutes until the cloves are soft and golden brown.

Cut potatoes into cubes and cook in the instant pot with the water on high pressure for 15 minutes.

Quick release the pressure and mash the potatoes with the sour cream, butter and roasted garlic.

Add salt and pepper and stir to combine everything together.

Serve topped with extra butter and chopped fresh chives, if desired.
