Place pizza dough onto a pizza stone or sheet pan topped with cornmeal

Drizzle with olive oil and sprinkle with salt & pepper. Pre-bake crust for 5 minutes at 450˚

Spread ricotta cheese on the pre-baked pizza crust

Saute sliced red onion and baby spinach

Spread on top of ricotta cheese

Add three fresh eggs

Bake for 15 more minutes until eggs are yolky and crust is browned
