Step 1

Saute onions, carrots, celery & garlic in olive oil until softened

Step 2

Add tomatoes & broth, bring to  a boil and simmer for 15 minutes

Step 3

Blend soup until smooth and add mascarpone cheese

Step 4

Serve soup hot garnished with fresh basil, if desired
