Happy February! I hope everyone is enjoying Winter so far. Here in Utah, it has been unseasonably warm and really not feeling like Winter at all. Even though it’s not terribly cold here, l am still going to share with you one of my favorite cold weather comfort foods. This Hot and Sour Vegetable Ramen is warm, comforting and has just the right amount of sour and spice.
Now, this is not your ordinary ramen. You know, the one in the colored bag for pennies that you lived off in college. Yes, you know what I’m talking about. This is a doctored up version that is full of earthy vegetables and zesty flavors that creates the perfect bite. The sour flavors of the vinegar and lime balance out the umami flavor of the soy and oyster sauces. We can’t forget that sesame oil! It adds in the perfect nutty toasty flavor.
A few years ago when my husband was in nursing school, he came down with a wicked cold. He was working full time and going to school full time and really couldn’t afford to be sick. One of his fellow classmates told him to go get hot and sour soup from our local Chinese restaurant. He was skeptical, but after having a bowl for lunch, he felt so much better! It clears out your sinuses, warms you through the core and definitely chases those germs away. Since then, he has been asking me to create something like this for him. I came up with this ramen version recently when we all got colds and it hit the spot for sure.
Now you can make this as spicy as you want. Kick up that sriracha flavor as much as your little heart desires. My husband and I like it a little bit spicier than the kids, so I leave the sriracha out and use it more as a garnish. That way, the kids don’t have it in their portions. I make this with the ramen noodles that come in that colored package I referred to earlier. Just throw out that seasoning packet and just use the noodles. Depending on what you have access to, there are some stores that sell packages of ramen noodles only. Feel free to add more vegetables to your liking too. This would be great with peppers, snow peas or any other vegetable you like!

Hot and Sour Vegetable Ramen
- 3 Tablespoons sesame oil
- 8 oz cremini mushrooms, sliced
- 1/2 medium white onion, sliced thin
- 1 Tablespoon chopped garlic
- 1 teaspoon grated fresh ginger
- 8 cups vegetable broth
- 2 Tablespoons oyster sauce
- 3 Tablespoons soy sauce
- 2 Tablespoons lime juice
- 2 Tablespoons rice wine vinegar
- 3 (3 oz) pkgs ramen noodles
- 3 cup baby spinach
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- sriracha , to taste
- In a large sized pot or dutch oven over medium high heat, add sesame oil along with mushrooms and onions. Saute vegetables until they are softened, about 3 minutes.
- To the vegetables, add in chopped garlic and ginger and saute for an additional 30-45 seconds until fragrant.
- Then add vegetable broth, oyster sauce, soy sauce, lime juice and rice wine vinegar and stir to combine.
- Bring the mixture back up to a boil and cook for 1 minute before adding in ramen noodles. Once you add in the noodles, cook until the noodles are soft. This should take about 2-3 minutes.
- Remove off of the heat and stir in baby spinach, salt, and pepper. Sriracha can be stirred in at this point or served on the side as a garnish.
