FRESH Grilled Peaches with Honey Mascarpone

This simple recipe for grilled peaches is the best summer dessert or side dish. Fresh, juicy peaches are grilled until slightly caramelized and then topped with whipped mascarpone infused with honey and vanilla. The chopped pistachios on top are the finishing touch to this easy and tasty dish. 


Units Scale
  • 8 oz mascarpone cheese, room temperature
  • 2 Tablespoons honey
  • 1 teaspoon vanilla extract
  • kosher salt
  • 6 large ripe peaches
  • olive oil
  • 1/4 cup chopped shelled pistachios


  1. Preheat the grill to medium high heat, approximately 375˚.
  2. In a small bowl combine mascarpone cheese, honey, vanilla extract and a pinch of kosher salt. Whisk the ingredients together till creamy and well combined. Place in the refrigerator.
  3. Cut peaches in half and remove the pits. Lightly brush with olive oil and sprinkle with a little bit of kosher salt.
  4. Place the peaches flesh side down on the preheated grill, and cook for 8-10 minutes until small bubbles can be seen around the edges. The surface should be lightly browned and caramelized. 
  5. Remove peaches from the grill and place on a serving platter or on individual serving plates. Top peaches with the sweetened mascarpone and sprinkle with chopped pistachios.


  • Choose peaches that are just barely ripe. If the peaches are overly ripe, they will be mushy after grilling and will fall apart. 

Substitutions and Variations

  • Plums, apricots and nectarines can be used as alternatives or in combination with the peaches
  • Substitute the mascarpone cheese with ricotta cheese, ice cream or greek yogurt
  • Substitute the pistachios with sliced almonds, chopped pecans or granola
