Chicken salad is probably my favorite of all the retro cold creamy salads out there. I’m not a huge fan of egg salad and macaroni salad just doesn’t do it for me. I think I love chicken salad because it’s so versatile. You can add whatever you like to it and eat it however you like. I’ve seen all sorts of things added to a chicken salad and there seem to be some strong opinions about it too. Do you add nuts? Do you add fruit? People can be very particular! This version has a unique twist on the classic and is perfect in every way that I like it to be. Curry Pecan Chicken Salad…Yum!!
You know me, I love a good shortcut in the kitchen. Especially, when it comes to meal prepping or setting myself up for a week of “real” food. If I had it my way, I would prep EVERYTHING from scratch. You know, just like Ina does. I would grow all my produce in my garden and perfectly roast all of my chickens for chicken salad. The truth is, I have 3 kids and a life and I do what I can. I think one of my favorite store-bought shortcuts, is a rotisserie chicken. It’s great to use as a meal on its own or to use in recipes such as this.
I really like this recipe because the flavors are so unique. The curry powder brings such a wonderful spice to the salad and I love the crunch of the pecans mixed with the sweetness of the grapes. This salad is best served after it has had time to chill in the refrigerator. It’s key to make sure all those flavors really melt into each other. You can eat this with crackers, on bread, over fresh spinach or with a big old spoon, right out of the bowl! Yes, that may or may not have happened a couple days ago. Enjoy!

Curry Pecan Chicken Salad
- 2 cups diced rotisserie chicken
- 1/2 cup diced celery
- 1/2 cup halved red grapes
- 1/3 cup chopped pecans
- 2/3 cup mayonnaise
- 1 teaspoon curry powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- Combine chicken, celery, grapes, and pecans in a medium-sized bowl and stir to combine.
- In a small bowl combine mayo, curry powder, garlic powder, and paprika. Stir to mix thoroughly together for the dressing.
- Add dressing to chicken mixture and stir to combine. Refrigerate for 30 minutes before serving.
