I always seem to struggle with what to make for dinner. I know that seems odd, especially since I cook all the time. But, I really have a hard time with not wanting to repeat recipes. Even though my family is fine with our “regulars” and sometimes prefer that, I feel like I need to always be coming up something new and exciting. One of our regulars that my kids love are Sloppy Joes. Who doesn’t love a good Sloppy Joe though? The kids requested it for dinner the other night, so instead of doing the normal Sloppy Joe on a bun, I decided to switch it up and do Sloppy Joe Melts instead. These 30 Minute Sloppy Joe Melts on Garlic Bread are sloppy, melty and everything that is good about a regular Sloppy Joe. Bonus points…it can be made in just 30 minutes.
30 Minute Dinners
Weeknights can get pretty busy around here with homework and activities, so quick easy “go to” dinners are key! I love this recipe because I can be doing multiple things at a time to get dinner on the table quick. While the onions and meat are cooking, I make the sauce and toast the garlic bread. Once everything is cooked, you can assemble and broil them to melt that cheese and you are all set!
Sloppy Joe Melts
If you aren’t a pickle person you can certainly omit the pickles. My daughter Samantha loves pickles, so she requests them on her sandwich plus extra on the side! Ethan on the other hand, hates them so I make his without. You can also try different cheeses, but provolone and pepper jack are the favorites around here!

30 Minute Sloppy Joe Melts on Garlic Bread
Sloppy Joe Mixture
- 1 cup ketchup
- 1 teaspoon yellow mustard
- 1/3 cup brown sugar
- 2 Tablespoons worcestershire sauce
- 1 Tablespoon pickle juice
- 1/2 teaspoon garlic powder
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1 Tablespoon olive oil
- 1/2 medium yellow onion, diced
- 2 teaspoons chopped garlic
- 1 1/2 pounds ground beef
- 6 slices texas toast
- 3 Tablespoons butter
- garlic salt
- 6 slices or 1 1/2 cups cheese, provolone, pepper jack or mozzarella work well
- 12 sliced pickles for sandwiches
- Preheat your oven broiler and line a baking sheet with parchment paper or foil.
- In a medium bowl, combine ketchup, mustard, brown sugar, worcestershire sauce, pickle juice, garlic powder, salt and pepper. Stir to combine and set aside.
- Preheat a large saute pan over medium high heat on the stove top. While the pan is heating, you can chop your onion and garlic.
- Once the pan is heated, add olive oil and onions. You'll then cook the onions for about 3 minutes, until they are softened and slightly translucent. While the onions are cooking, start the next step to prep your toast.
- Lay the slices of bread on your prepared baking sheet and spread a 1/2 Tablespoon of butter onto one side of each slice of bread. Then sprinkle the buttered side with a little bit of garlic salt.
- Back to the onions, add in the chopped garlic, stir together and cook for an additional minute. Add the beef to the pan and stir to combine with the onions and garlic. Your going to want to cook the beef with the onion and garlic mixture for about 5 minutes until it is completely browned. While this is cooking, put your garlic toast under the broiler in the oven.
- Your garlic toast should be done in about 3-5 minutes, about the same time as the beef. Keep a close eye on the toast though. Every oven is different and you don't want it to burn. Once the butter is melted and toast is slightly brown, remove from the oven and set aside.
- Once the beef is browned, add in your prepared sauce and stir to combine. Continue to cook for another 3-5 minutes, until sauce thickens and sugar is dissolved.
- Remove sloppy joe mixture from the heat and spoon evenly onto your garlic toast. Top the sloppy joe mixture with sliced pickles and cheese. Place open faced sandwiches under the broiler for an additional 3-5 minutes, until the cheese is melted.
