Remember those sugar pumpkins I picked up before Halloween? I finally roasted them the other day and made my own homemade pumpkin puree. I’ve been trying out all sorts of pumpkin recipes and have even come up with a few new ones. This Roasted Sugar Pumpkin Hummus is a new recipe I came up with and will for sure be on repeat this Fall!
The other day, my sister invited my family and my brother and his wife over to her house for dinner. My little brother and his wife are moving to New York City for a new job opportunity. We wanted to get together before he departed, so we decided to meet for dinner at my sister’s house. Not wanting to come empty handed, I decided to start playing with some of the puree I had in the fridge.
Lately, my Instagram feed has been inundated with so many pumpkin recipes, it’s hard to not make them all! One thing that I kept seeing around was pumpkin hummus. Now, I have never had pumpkin flavored hummus, but I love pumpkin and hummus, so why not? This pumpkin hummus is so simple to make that I’m wondering why I don’t make my own hummus more often! Simply add all of your ingredients to your food processor and in less than a minute you will have the most creamy delicious hummus for an afternoon of healthy snacking!
The flavors are fresh and simple, yet comforting. They came together to make the most delicious flavored hummus I have ever had. This pumpkin hummus is perfect for Fall and would be an even better appetizer for the upcoming Thanksgiving holiday.
